不生病之真法之十五:营养与健康之七“新营养学”

引导我埋头钻研自然医学的老师王晖评博士主张“自然、新鲜、完整的新营养观”。譬如张小姐邻居的小孩喜食生菜,生菜来自于自然,刚从土里拔出来,所以绝对新鲜。不经加工、煮熟,所以营养不流失,而且根、茎、叶完全吃下谓之完整。这种吃法完全吻合自然、新鲜、完整,所以这个小孩必然健康无病。

十年前,在日本东京曾经举行了一次世界性营养问题发表会,参加人士都是来自世界各地的营养学家、博士,每位专家、博士对人类营养都有极高的造诣。在发表会中所有的专家、博士们无不兴高采烈的把自己的重大发现或伟大的成果提出给大家分享。每位专家、博士都认为自己的伟大发现或发明能给人类带来健康与幸福,甚至可青春永驻、长生不老。整整一星期的发表会中高潮迭起,毫无冷场,使每位参加者都乐而忘返,认为不虚此行。

当发表会即将接近尾声时,讲台上突然出现了一位日本高僧,当大家十分讶异中,这位高僧讲话了:“这星期以来,听了各位专家、博士们对于营养方面的伟大发现和发明,其苦心与贡献非常令人敬佩。现在有个问题想请教各位:‘牛吃草,草的营养价值如何?’”这时场内一片寂静,因为所有专家、博士都认为他们所研究发明的都属于尖端科技高水准的营养学,而这位高僧却以极平常又粗贱的草来当话题,这简直是侮辱人格,因此都不愿作答。过了一会儿,这位老僧又开口了:“牛吃草,牛所挤出来的牛奶喂养全世界的小孩,请问牛奶的营养如何?有那位博士先生认为牛奶不营养?那么牛仅吃草,请问草的营养又如何呢?”

这时,这些自认为高人一等的专家、博士们心中已略有感触了,觉得这位高僧的确有两把刷子。那么,再请问:“牛什么时候吃草?”生长在乡下的小孩也许都知道,牛通常都在太阳出来后才吃草。为什么呢?因为草于夜间摄取露水和土壤中的矿物质、水分后,必须经过阳光照射产生光合作用,才能使矿物质、水分机转成为最好的营养素,这时牛吃了这些草才有益身体。牛能选择这种最佳时间吃草,这也就是地球万物与生俱来的自然求生本能。

或许各位都知道,牛奶的蛋白质含量很高,假如只吃蛋白质才能补充蛋白质的话,那么牛只吃草而已,而牛奶的蛋白质是从何而来呢?其实,地球万物都有其自然的本能,人类也是一样。譬如古时候的妇女有的一辈子吃不到一块肉,可是身体都很健康,膝下子女成群,向来不缺奶水。因为母奶的蛋白质含量很高,所以现代营养学家也一致公认母奶的营养价值。可是古代妇女对蛋白质的摄取量少得可怜,而母奶中怎能含有大量的蛋白质呢?而现代妇女营养充足,却反而不孕或没奶水?有许多问题实令人遐想。

我刚刚提过,地球万物都有其自然本能,也就是自然法则。不论人类或所有哺乳动物在幼儿成长的初阶段时,必须摄取大量的蛋白质,这时母体的自然本能就会把人体所摄取的营养转变成含有大量的蛋白质的奶水,当这阶段过后,这些新生幼儿不需要这大量的蛋白质时,母体的奶水就会自动消失,甚至于有的动物,时间一到就会强制“断奶”,一点也不妥协,这也就是自然法则,而牛奶中的蛋白质完全是从草机转而来,也可以说是牛体内的一种自然转换,这种自然转换的过程,我想还是留给各位当上科学家后再继续研究吧!或者各位有透视和具有观察物质分子变化的特异功能时,就可一目了然。

刚刚我们提到,草必须经过光合作用后,牛才会吃它,因为草或其他植物所摄取的养分必须经过阳光照射产生光合作用后,这些养分才有益于植物本身,也才能被植物于生成过程中所利用,如此有益于植物本身也才有益于草食动物。植物经过光合作用后,其营养价值甚高,不仅涵盖了所有营养学家所发现的蛋白质、维生素、脂肪、糖类和矿物质等五大营养,其中还有许多未被发现的营养素,所以说,自然界的奥秘实在非人类的有限智慧所能得知,绝不能因小小的发现而沾沾自喜,更不可以为人定胜天,“天”乃指大自然而言,人类想胜过大自然,可能吗?我们现在所居住的地球,只是太阳星系的一小部分而已,而太阳星系以外仍是无边无际,光是太阳星系都无法征服,还妄想胜天;其实人只能顺乎自然,欲求顺乎自然则须了解自然、探讨自然,刚才已提过,自然就是所谓的天。俗语说:“顺天者昌,逆天者亡。”其道理在此,譬如牛吃草,完全顺乎自然,合乎自然,不经煮熟、加工、贮藏、冷冻,而且根、茎、叶都完完整整的吃进肚子里,也完全吻合自然、新鲜、完整的新营养观,所以牛仅吃草,却长得很强壮又很健康,从来不刷牙却不见蛀牙。现在各位对植物类的营养是否已有了新认识呢?为什么牛不刷牙却不蛀牙?这问题容后再说明。

6 main causes of heart disease


Heart ailments, infectious diseases and cancer remain the world's top three killers, according to the UN health agency.

Heart attacks and related problems are the top killer, especially among women, claiming 29 percent of people who die each year, the World Health Organization said in a report on the global burden of disease in year 2004.

Women die more often from heart disease than men. The rate for females is 31.5 percent, and for males 26.8 percent, the report said. The percentage for women was higher because there were more women living at older ages than men. But in general, men are more affected by heart diseases. This could be due to men are more often overweight or obese, get insufficient physical activity and eat more fat and salt.

The following are the six main causes of heart disease for you to understand, so that you can be well prepared and prevent heart disease.

1. Smoking
Most men are unable to quit this bad habit. Smokers are suffering higher risk of heart disease by 3 to 6 times, this is because the toxins in cigarettes will damage blood vessels and interfere with the heart to get sufficient oxygen.

2. High blood pressure
This is one of the main cause of heart disease. Uncontrolled high blood pressure forces the heart to work overload and subsequently increases higher risk of contracting heart disease.

3. Excessive intake of high fat and high salt foods
Eating a lot of high fat and high salt foods will increase the risk of heart disease. This is because the blood cholesterol will increase, thereby increasing the risk of contracting heart disease.

4. Lack of exercise
Lack of exercise increases the risk of contracting heart disease. Exercise helps to strengthen the heart function and reduce cholesterol level, which will help you stay away from heart disease.

5. Mental stress
Uncontrolled and persistent mental stress can cause you to be attacked by heart disease. Therefore, you should always get involved in some pastime or sports to release mental stress, which will help to cut down the risk of contracting heart disease.

6. Diabetes
Diabetes patients face higher risk of contracting heart disease. Uncontrolled diabetes will accelerate the narrowing of blood vessels, which lead to coronary heart disease.

In order to prevent and stay away from heart disease, you should develop good eating habit and lifestyle, the best thing is to adopt vegetarian diets to reduce cholesterol level and to smoothen blood circulation, so that the heart can be functioning well.

Vegetarian Foods: Powerful for Health

What type of diet is best for disease prevention and to maintain a healthy weight? The best diet is one that you can stick with for life. A healthy diet is a lifestyle, not a fad that is dangerous or difficult to maintain.

Abundant evidence suggests that the most healthful diets set aside animal products and also reduce fats in general, while including large amounts of vegetables and fruits. Eliminating meat and dairy products from your diet is a powerful step in disease prevention.

A vegetarian menu is a powerful and pleasurable way to achieve good health. The vegetarian eating pattern is based on a wide variety of foods that are satisfying, delicious, and healthful.

Vegetarians avoid meat, fish, and poultry. Those who include dairy products and eggs in their diets are called lacto-ovo vegetarians. Vegans (pure vegetarians) eat no meat, fish, poultry, eggs, or dairy products. While there is a considerable advantage to a lacto-ovo vegetarian pattern, vegan diets are the healthiest of all, reducing risk of a broad range of health concerns.

A Healthy Heart


Vegetarians have much lower cholesterol levels than meat-eaters, and heart disease is less common in vegetarians. The reasons are not hard to find. Vegetarian meals are typically low in saturated fat and usually contain little or no cholesterol. Since cholesterol is found only in animal products such as meat, dairy, and eggs, vegans consume a cholesterol-free diet.

The type of protein in a vegetarian diet may be another important advantage. Many studies show that replacing animal protein with plant protein lowers blood cholesterol levels—even if the amount and type of fat in the diet stays the same. Those studies show that a low-fat, vegetarian diet has a clear advantage over other diets.

Lower Blood Pressure


An impressive number of studies, dating back to the early 1920s, show that vegetarians have lower blood pressure than nonvegetarians. In fact, some studies have shown that adding meat to a vegetarian diet raises blood pressure levels rapidly and significantly. The effects of a vegetarian diet occur in addition to the benefits of reducing the sodium content of the diet. When patients with high blood pressure begin a vegetarian diet, many are able to eliminate the need for medication.

Controlling Diabetes


The latest studies on diabetes show that a vegetarian diet high in complex carbohydrates and fiber (which are found only in plant foods) and low in fat is the best dietary prescription for controlling diabetes. A diet based on vegetables, legumes, fruits, and whole grains, which is also low in fat and sugar, can lower blood sugar levels and often reduce or even eliminate the need for medication. Since individuals with diabetes are at high risk for heart disease, avoiding fat and cholesterol is important, and a vegetarian diet is the best way to do that.

Cancer Prevention


A vegetarian diet helps prevent cancer. Studies of vegetarians show that death rates from cancer are only about one-half to three-quarters of the general population’s death rates.

Breast cancer rates are dramatically lower in countries where diets are typically plant-based. When people from those countries adopt a Western, meat-based diet, their rates of breast cancer soar. Vegetarians also have significantly lower rates of colon cancer than meat-eaters. Colon cancer is more closely associated with meat consumption than any other dietary factor.

Why do vegetarian diets help protect against cancer? First, they are lower in fat and higher in fiber than meat-based diets. But other factors are important, too. Plants contain other cancer-fighting substances called phytochemicals. For example, vegetarians usually consume more of the plant pigments beta-carotene and lycopene. This might help to explain why they have less lung and prostate cancer. Also, some studies have suggested that diets that avoid dairy products may reduce the risk of prostate and ovarian cancer.

Some of the anti-cancer aspects of a vegetarian diet cannot yet be explained. For example, researchers are not quite sure why vegetarians have more of certain white blood cells, called “natural killer cells,” which are able to seek out and destroy cancer cells.

The calcium Connection


Vegetarians are less likely to form either kidney stones or gallstones. In addition, vegetarians may also be at lower risk for osteoporosis because they eat little or no animal protein. A high intake of animal protein encourages the loss of calcium from the bones. Replacing animal products with plant foods reduces the amount of calcium lost. This may help to explain why people who live in countries where the diet is typically plant-based have little osteoporosis, even when calcium intake is lower than that in dairy-consuming countries.

Planning Vegetarian Diets


It’s easy to plan vegetarian diets that meet all your nutrient needs. Grains, beans, and vegetables are rich in protein and iron. Green leafy vegetables, beans, lentils, tofu, corn tortillas, and nuts are excellent sources of calcium, as are enriched soymilk and fortified juices.

Vitamin D is normally made in the body when sun shines on the skin. People who are dark-skinned or live at northern latitudes have some difficulty producing vitamin D year-round. Vitamin D can easily be obtained from fortified foods. Some sources are commercial breakfast cereals, soymilk, other supplemental products, and multivitamins.

Regular intake of vitamin B12 is important. Good sources include all common multiple vitamins (including vegetarian vitamins), fortified cereals, some brands of nutritional yeast, and fortified soymilk. It is especially important for pregnant women and breast-feeding mothers to get enough vitamin B12. When reading food labels, look for the word cyanocobalamin in the ingredient list. This is the form of vitamin B12 that is best absorbed.

借问素食何处有:(2)马赛乌搭马(Masai Utama)的善缘素食店

初到柔佛工作,因人生地不熟,找不到素食店,而挨了几天的面包、水果、泡面等。最后在面包店老板娘的指示下,才认识了这一间素食店。

这间名为“善缘“的素食店坐落于马赛(Masai)镇大街的后面。如果您通过巴西古当(Pasir Gudang)大道往巴西古当镇的方向行驶,经过两座通往斯里安南(Seri Alam)的天桥 (不要转左,直走)以及无盖巴士车站,您就会看到左手边有几排的店屋。转入左手边,直走,直到看见三岔路口的家私店,转左,到另一个路口再转左。注意看左手边的店屋,您就会找到这间素食店。从这条路向前行驶将通往马赛大街。


这间素食店主要售卖经济饭菜,大部分的菜肴都可口。其中一道我爱吃的菜肴是“天贝tempeh”,它是一道既美味又营养的食物。其他美味可口的菜肴包括酸甜“豆卜”、酿豆腐、辛辣的豆类和瓜类以及各式的蔬菜等。

如果您不想吃杂饭,那我介绍您点沙煲饭。您很难在别的素食店找到这道食物吧!所以您很幸运能够在此享用到既美味,别处又难找到的食物。除此之外,您还能在这里吃到素肉骨茶(还是柔佛再也的素食小栈售卖的素古茶比较美味)、沙煲伊面、印度炒面、东炎面、咖喱面、云吞面、福建面、臭豆炒饭等。如何?流口水了吧?

善缘素食店的营业时间从早上七点至下午四点,星期一至星期六。星期日没有营业,除非是初一十五。

Where to find vegetarian foods: (2) Shang Yen in Masai Utama

When I first working in Johor, this was the first vegetarian restaurant I managed to find in Masai and Seri Alam areas, after suffering for a few days without any proper vegetarian foods, which I just ate some bread, fruits and vegetarian instant noodles.

This vegetarian restaurant called Shang Yen is located in Masai Utama, which is behind Masai main road. If you drive along Pasir Gudang Highway towards Pasir Gudang town, after 2 flyovers leading to Seri Alam (do not turn to Seri Alam, go straight)and pass by a bus stop without shelter, you will see a few rows of shop lots on your left hand side. You turn left towards the shop lots and drive straight until you see a furniture shop at the junction and you turn left again to the side lane. Immediately reaching another junction, you turn left again and look for the vegetarian restaurant at your left hand side. This road is eventually leading to Masai main road.

This restaurant mainly serves mixed rice. The dishes are mostly delicious. One of the dishes I love to eat is “tempeh” which is a healthy and delicious dish. Other delicious foods I like are sweet and sour dried bean curd, “yong tau foo”, hot and spicy fried beans and eggplants and all sorts of vegetables.


If you do not like mixed rice or if you want to try other food, I would recommend you their clay pot rice. It is very hard to find vegetarian clay pot rice in most of the vegetarian restaurants and you are lucky enough that you can find it here. It is one of my favorite foods and it taste pretty good.

Other foods include vegetarian “bak kut teh” (the one sold in Vege Station in Johor Jaya is more delicious), clay pot “yee mee”, Indian fried noodle, tom yam noodle, curry noodle, “wang tang mee”, Hokkein mee, “petai” fried rice, etc. How is it? Sounds tasty?

This veggie restaurant operates from 7am to 4pm, Mondays to Saturdays. It will open on Sundays if 1st and 15th days of lunar month fall on Sundays.

Ondeh ondeh (onde onde) recipe


Ondeh ondeh is one of my favorite Nyonya food. I love ondeh ondeh, yummy yummy! Beside pulut tatal (pulut tekan), this was another food prepared by my wife for a function organized by Lapis Lazuli Light (Malaysia) a few months ago.

The following is the recipe of ondeh ondeh. If you feel it is too sweet, you may cut down the weight of gula Melaka. (The photographs shown are just indicative)

A) Skin:

- 250g sweet potatoes
- 200g glutinous rice flour (sifted)

 
- 50g pandan juice


- 100g coconut milk

B) Filling:
- 200g gula Melaka (palm sugar) (chopped)


C) Coating (mixed, steam for 5 mins)
- ½ grated white coconut

 


- ½ tsp salt

D) Method:
1. Peel and cut sweet potatoes into small pieces. Steam with high heat until very soft. Put sweet potatoes into a mixing bowl and mash


2. Add in glutinous rice flour, pandan juice and mix well
3. Add coconut milk and knead until it form a soft dough

4. Form small balls with the dough and fill a little filling inside and seal up

5. Put into a pot of boiling water and boil until it floats up. Dish and drain. Coat with grated white coconut. Serve hot or cold

A)皮料

- 番薯:250g
- 糯米粉:200g (过筛)

- 香兰叶汁: 50g

- 椰浆:100g

B)馅料
- 椰糖:200g(切碎)

C)沾料
- 去皮白椰丝:1/2粒(椰丝和盐混均蒸5分钟)

- 盐:1/2茶匙

D)方法
1.番薯削皮,切薄块,大火蒸至熟软,取出,放进钢盆内,压烂成泥

2.加入糯米粉和香兰叶汁拌均

3. 慢慢加入椰浆搓至光滑粉团

4.把粉团搓成一粒粒的小球,然后包上馅料
5.把粉团投入已煮开的滚水中,煮至粉团熟及浮上水面,捞起,沾上白椰丝,即可食用
